Flapjack Recipe
This is my flapjack recipe. These are UK style flapjacks, which are referred to in other parts of the world as “Oaties”. They are not a type of pancake.
These are ideal instead of “energy bars” for sustaining yourself on long rides. I normally have a back pocket full of them
The tricky thing with flapjacks is cooking them for exactly the right time. If they are undercooked they fall to bits in the pocket. If they are overcooked then they are like eating rocks
For a vegan version use vegan margarine instead of butter.
Ingredients
- 14oz of Oats
- 5oz butter or Marg
- 6oz brown sugar
- 4 dessert spoons of Golden Syrup
- A few dates and a small amount (1 tsp) of sunflower seeds
step by step
- Melt better, sugar and Golden Syrup in a large saucepan
- Add oats and mix until all the oats are “coated” or have absorbed some of the butter mix
- Prepare a tin lined with baking parchment 3cm x 20cm x 30cm
- Sprinkle dates/seeds in the bottom of the tin
- Add oats/butter/sugar mix to tin, smooth the surface
- Put in preheated oven 175 degrees C for 20 minutes
- Remove and cool for 10 minutes
- Cut shapes of flapjacks into still warm mix
- Once cooled tip out and store in air tight container
